Just a couple of things.
First, I want to add my two cents on the water issue. First, it makes you feel full, so decreases your intake of food.
Second, as you increase proteins it is important to keep your kidneys "flushed out", large chains of proteins can be injurious to the kidneys.
(if you decrease carbs and fats, the difference is going to be increasing proteins)
On exercise...
My "freshman 20" was more like "freshman 40". I was a PUDGE!
Most of it went away by serious exercise and eating smart, "for content not taste" exactly as the other have said.
Yes, you have to burn 3500 (I would swear it feels more like 35000) Kcal to burn one pound. What many folk don't know is that 1/2 hour of exercise raises the overall metabolic rate for several hours. This is not the "basal rate" but a transitory thing, a response to the exercise where you actually burn some extra calories while resting AFTER exercising. It is a minor increase, but if you exercise regularly, it adds up quickly.
